Here’s our spiel on organic beer. All the ecologically appropriate, sustainably raised ingredients in the world won’t amount to bupkis if a brewer makes crappy beer. Vermont-based Wolaver’s does not. The oatmeal stout, the brewery’s first foray into dark beer, is blacker than an Exxon oil spill and is anointed with a creamy head seemingly dispensed from a Reddi-wip can. The taste: smooth sailing across a sea of nuts, espresso, and bittersweet chocolate.

Ninkasi Brewing Company ABV: 7.2%
Named after the Sumerian beer goddess, Ninkasi is the proud product of Eugene, Oregon, and, thanks to brewer Jamie Floyd’s no- hops-spared approach, one of the fastest growing breweries on the West Coast. The Total Domination IPA and Tricerahops Double IPA are already classics, but we dig Oatis, a creamy oatmeal stout that’s as smooth as silk sheets in a honeymoon suite. It’s bigger than most oatmeal stouts, with a nice bitter ballast and plenty of roast and chocolate to lead you to a dry finish line.
